Ingredients

1 hour 15 mins
4 servings
  • 4large chicken thighs
  • 8 rashersstreaky bacon
  • 2onion
  • 4 clovegarlic
  • 2chicken stock cubes
  • 2 tbspchopped parsley
  • 1 tbspground nutmeg
  • 2/3 tbspallspice
  • 1 1/2 tbspground ginger
  • 1chilli
  • 2 tbspolive oil

Steps

1 hour 15 mins

    Preheat oven to gas mark 6

  2. 2

    Sear chicken for 2 minutes on each side in hot pan

  3. 3

    Rub in herbs/spices

  4. 4

    Sear for 3 more minutes on each side

  5. 5

    Chop onions and garlic in half

  6. 6

    Place chicken into baking tray, cover in bacon

  7. 7

    Place onions, garlic and chilli into baking tray

  8. 8

    Drizzle oil over top and cover in tin foil

  9. 9

    Put in oven and bake for 50 minutes to an hour
