beat yolks and sugar in stand mixer until yolks lighten and sugar is dissolved

In saucepan over high heat, combine milk, heavy cream, and nutmeg

Bring mixture to a boil, stirring occasionally

remove from heat

Temper hot mixture into egg and sugar mixture

Return everything to the pot and cook until it reaches 160°F

Remove from heat and stir in bourbon

Chill in refrigerator until it reaches 40°F

Process in ice cream maker
