Ingredients

12 servings
  1. 1 stickbutter
  2. 1 cupsugar
  3. 1 1/4 cupmashed sweet potatoes
  4. 2eggs
  5. 2 1/2 cupflour
  6. 1 1/2 tbspbaking powder
  7. 1 tspnutmeg
  8. 1 tspsalt
  9. 1/2 tspcinnamon
  10. 1 1/4 cupmilk
  11. 1/2 cupchopped pecans
  12. 1 1/2 tsplemon extract
  13. 1/4 cupsugar
  14. 1 tbspcinnamon

Steps

  1. 1

    Cream butter and 1 c sugar. Stir in mashed potatoes and eggs.

  2. 2

    Add the next 8 ingredients, mixing well.

  3. 3

    In a small bowl, combine 1/4 c sugar and 1 T cinnamon.

  4. 4

    Spoon batter into greased muffin tins, sprinkle with the sugar mixture.

  5. 5

    Bake at 400 for 20-25 minutes
