1 stickbutter
1 cupsugar
1 1/4 cupmashed sweet potatoes
2eggs
2 1/2 cupflour
1 1/2 tbspbaking powder
1 tspnutmeg
1 tspsalt
1/2 tspcinnamon
1 1/4 cupmilk
1/2 cupchopped pecans
1 1/2 tsplemon extract
1/4 cupsugar
1 tbspcinnamon

Cream butter and 1 c sugar. Stir in mashed potatoes and eggs.

Add the next 8 ingredients, mixing well.

In a small bowl, combine 1/4 c sugar and 1 T cinnamon.

Spoon batter into greased muffin tins, sprinkle with the sugar mixture.

Bake at 400 for 20-25 minutes
