Ahead of time, soak dill in wine for at least 30 minutes.

Boil dill and wine, shallot and lemon juice in saucepan over high heat until reduced to about 1/4 cup (about 6 minutes).

Reduce heat to low. Whisk in butter, one piece at a time allowing each piece to mealt before adding the next.

Remove from heat. Season with salt and pepper to taste.
