Ingredients

  1. 100 gramsdark chocolate
  2. 150 gramsbutter, at room temperature
  3. 150 gramscaster sugar
  4. 2eggs
  5. 2 tbspcocoa powder
  6. 100 gramsself-raising flour
  7. 2 tspinstant coffee,dissolved in 1 tablespoon boiling water
  8. decoration
  9. 200 gramsicing sugar
  10. 2 tspinstant coffee dissolved in 1 tablespoon boiling water
  11. 50 gramsgrated dark chocolate
  12. 100 gramsbutter, at room temperature

    preheat oven to 180°c (350°f ) Gas 4. Then line the muffin tin with paper cases.

  2. 2

    Melt the chocolate in a bowl over a saucepan of simmering water. Then set aside to cool.

  3. 3

    Beat the butter and sugar in a bowl until pale and fluffy, then beat in the eggs, one at a time.

  4. 4

    Stir in the melted chocolate and cocoa powder.

  5. 5

    Sift the flour into the mixture,then stir in the dissolved coffee.

  6. 6

    Spoon the mixture into the paper cases

  7. 7

    Bake for 20 minutes until risen and a skewer inserted in the middle comes out clean. Transfer to wire rack to cool.

  8. 8

    To decorate: Beat the butter,icing sugar and dissolved coffee in a bowl until pale and fluffy. Spread over cakes smoothly and sprinkle with the grated chocolate.
