This is a typical way to cook the artichokes in Navarra, the north of Spain

Peal and wash the artichokes, cut them in halfs

Peal and dice the potatoe

Boil the artichokes and the potatoe in salted water for about 12 minutes.

Drain and save the water (some will be used later but you can save most of it to cook some rice another day)

Peal and chop the garlic cloves. Cut the jamón too. Fry them in a pan with the olive oil.

Once the garlic gets brown, add the potatoe and the artichokes. Fry it for 2-3 minutes

Now its time to add the flour. Mix it all and add about 2 cups of tje water you have used to boil the veggies. Cook it all for 3-4 more minutes or until you get a nice sauce not too thick

Serve and enjoy. I had it for dinner with some grilled salmon and it turned out amazing
