Methi/ Fenugreek Kadhi

When we are bored of curries, we turn to ‘kadhi’. Here’s a yummy combination of the goodness of fenugreek (methi leaves) with our simple Gujrathi styled kadhi. Out of all the benefits of methi, it’s anti inflammatory properties,helping digestion and lowering cholesterol levels are the greatest boon to all, especially to elders and expectant mothers, who can also benefit from methi’s milk increasing capacity in the body after child birth

Ingredients

20 minutes
2 servings
  • 200 gmsfenugreek (methi leaves)
  • 2tbsn gram flour/besan
  • 5tbsn liquid curd / beaten yogurt
  • to tasteSalt
  • 2dry red chillies
  • 2tbsn cumin seeds/Jeera
  • 1tbsn red chilli powder
  • 1/2tbsn turmeric powder
  • 1/2 inchginger grated
  • 8-10curry leaves chopped
  • 2tbsn oil
  • 1tsn asafoetida powder
  • 2green chillies chopped fine

Steps

20 minutes
  1. 1

    Clean, chop and keep fenugreek leaves aside

  2. 2

    In a wok, add a tbsn of oil and allow it to heat at medium flame

  3. 3

    Add a pinch of asafoetida

  4. 4

    Add cumin seeds and a tbspn red chilli powder and let cumin seeds splutter for a while

  5. 5

    Add grated ginger, green chillies and sauté for a minute on medium heat

  6. 6

    Add in the fenugreek leaves and mix well

  7. 7

    Add a cup of water and bring it to boil

  8. 8

    Cook covered till fenugreek leaves soften on Low heat

  9. 9

    Meanwhile add curd in a bowl and beat it slightly

  10. 10

    Add gram flour to it and mix well with some water till no lumps are seen

  11. 11

    Our fenugreek leaves should be done by this time. Pour in the curd mix to it and increase the heat and mix well

  12. 12

    Bring it boil and add a tbsn red chilli powder and mix

  13. 13

    Keep stirring constantly as you pour a cup of water and bring it to boil

  14. 14

    Add salt to taste and check for the thickness(depends on the consistency you prefer)

    Once done take off heat and pour the kadhi in a bowl

  16. 16

    For the tadka, heat a tbsp oil in a tadka pan

  17. 17

    Add a tsn of cumin seeds and allow to splutter

    Add chopped curry leaves and dry red chillies

    Immediately add this tadka to our kadhi resting in the bowl

    Enjoy this yummy kadhi at room temperature with rice, khichdi,puris,etc
