Chop vegetables and sauté in olive oil. Add water, ham shank, and bay leaves. Bring to boil then simmer partially covered for 2-1/2 hours. Add remaining ingredients, bring back to boil, and simmer uncovered for 1-1/2 hour. Remove ham shank and bay leaves. Blend liquid with vegetables and chopped ham with hand blender. Remove ham from shank, shred with fork, and return to soup. Yum. Yum.
