Ingredients

4 servings
  • 1onion chopped
  • 2 clovegarlic minced
  • 1 canpinto beans (15.5 oz), rinsed and drained
  • 6 cupspinach lightly packed
  • 1/4 cupchunky salsa
  • 1 tbspchili powder
  • 2 tspground cumin
  • 1/2 tspdried oregano
  • 1/4 tspblack pepper
  • 4tortillas (8")
  • 1/2 cupshredded cheddar

Steps

  1. 1

    cook onion in large frying pan on medium heat constantly stirring

  2. 2

    after onion has turned color, add garlic and cook till fragrant

  3. 3

    add salsa spices and beans, then stir

  4. 4

    add spinach and cook until soft and well mixed

  5. 5

    ready to fool your tortillas with, enjoy
