Ingredients

4 servings
  1. 1onion chopped
  2. 2 clovegarlic minced
  3. 1 canpinto beans (15.5 oz), rinsed and drained
  4. 6 cupspinach lightly packed
  5. 1/4 cupchunky salsa
  6. 1 tbspchili powder
  7. 2 tspground cumin
  8. 1/2 tspdried oregano
  9. 1/4 tspblack pepper
  10. 4tortillas (8")
  11. 1/2 cupshredded cheddar

Steps

  1. 1

    cook onion in large frying pan on medium heat constantly stirring

  2. 2

    after onion has turned color, add garlic and cook till fragrant

  3. 3

    add salsa spices and beans, then stir

  4. 4

    add spinach and cook until soft and well mixed

  5. 5

    ready to fool your tortillas with, enjoy
