Ingredients

  • 1 tspSalt
  • 1 tspPepper
  • 3 tbspOlive Oil
  • 2 cupPanko Bread Crumbs
  • 1/2 cupDijon Mustard
  • 1 tspOnion Powder
  • 1 tspRosemary
  • 1 cloveGarlic, finely Minced
  • 4 eachFrenched Rack of Lamb

    Heat oven to 425

  2. 2

    Mix together Panko Bread Crumbs, 1/2 of the salt and pepper, Rosemary, Onion Powder, Garlic and 2 tsb. olive oil(to hold the mixture together).

    Season rack of lamb with 1/2 of the salt and pepper. Add 1 tbsp of Olive Oil to a searing hot pan. Brown rack of lamb on all sides for about 3 minutes each side. Remove from pan

    Place lamb on roasting pan. Coat with Dijon Mustard and press panko mixture to cover.

  5. 5

    Lamb in the oven. Roast for roughly 25 minutes for medium rare. Here's a tip I learned from "Lynn"... to check cook on the lamb, press your thumb and index finger together on left hand and poke lamb filet with right hand. That density indicates rare. Thumb and middle finger indicates medium. Thumb and ring finger indicates well.

    Cover with foil and let rest for 10 minutes before slicing :-)
