Heat oil in saucepan over medium-high heat.

Add onion and red pepper, sauté until beginning to soften, about 5 minutes.

Add garlic and jalapeño, sauté another 5-10 minutes

Stir in quinoa, chili powder, cumin, broth and salt

Cook uncovered for 10-15 minutes, until liquid is fully combined.

Add black beans and 3/4 cup cilantro.

Transfer to bowl

Sprinkle feta and remaining cilantro over quinoa to taste
