Process onion (squeeze out juice)

Add lamb and onion to food processor with garlic, marjoram, rosemary, salt and pepper.

Food process until mixture is a fine paste, scrape sides as needed.

Preheat oven 350*
- 5
Press mixture into meatloaf pan, in water bath, in the oven for 60-75 minutes or until it reaches 165-170*

Remove from oven, onto cooling rack, dump grease. Place a brick (wrapped in aluminum foil) on loaf until it reaches 175*

Slice and lightly fry up in a pan when ready to eat.
