Ingredients

12 servings
  • 1 cupcouscous
  • 1 cupmed cucumber, coarsely chopped
  • 2 cupcherry tomatoes, halved
  • 1sweet, green pepper, coarsely chopped
  • 1/4 cupItalian parsley
  • 1/4 cupfresh mint
  • 1/2 cupsnipped chives
  • 1/2 cupwalnuts, toasted and coarsely chopped
  • 1/4 cupfresh oregano
  • 2 tspsugar
  • 1/3 cupolive oil
  • 1/3 cupbalsamic vinegar
  • 1/2 cupfeta cheese

Steps

  1. 1

    Cook couscous, fluff with fork.

  2. 2

    In large bowl combine tomatoes, cucumber,sweet pepper, chives, parsley, mint and oregano. Fold in couscous

  3. 3

    In small bowl whisk together balsamic vinegar, olive oil, sugar, salt & pepper to taste. Pour over couscous mix and toss to combine.

  4. 4

    Spoon into serving bowl or cover and chill upto24 hours.

  5. 5

    To serve, top with feta cheese and walnuts.

  6. 6

    This serves 12,so may need to be cut in half.

  7. 7

    Sugar can be eliminated if desired.

  8. 8

    Fresh herbs are good but dried ones work, just cut down on portions.
