Cheesy chicken, broccoli and potato casserole!

Cooking Instructions

preheat oven to 375°F
- 2
boil potatoes until fork tender, slice in half
- 3
boil broccoli, not too soft
- 4
in a nonstick skillet, brown and season chicken(season to your liking)
- 5
in a sauce pan...melt butter, sour cream, milk,and cheese to make sauce
- 6
in a large mixing bowl...combine chicken, broccoli, potatoes and cheese sauce
- 7
pour mixture in deep dish pan, top with more shredded cheese and place in oven for 20-25 min until bubbling hot

My Mother is a low carb dieter and when she cooked this I just loved it! I count calories so sometimes I add a little rice (1/2 cup) to mix in my portion of the casserole. This only adds around 100 calories. This casserole (as is with no add ins) is 310 calories for 1/6 of pan which is a huge portion! I hope y'all like it!! =)
