I have an "Instant Pot" Electric Pressure Cooker, which I just love. I can make these beans at 4:00 p.m. and be eating them by 6:00 p.m. I'm not sure what amount of pressure I use, since I use the "Bean/Chili" setting.

  • 1 1/2 cupNavy Beans (Dry)
  • 3 cupWater
  • 1/4 cupKetchup
  • 1/4 cupMaple Syrup
  • 2 tbspBrown Sugar
  • 2 tbspMolasses
  • 1 tspWorcestershire Sauce
  • 1/2 tspSalt
  • 1/4 tspPepper
  • 1/4 tspChili Pepper
  • 1medium Onion, Chopped or Strip (your choice)
  • 1 1/2 cupBacon, Diced
  • 8 ozBeer, Any Kind

  1. 1

    In a fry pan, sauté the bacon until the bacon is crunchy, remove from pan and set aside. Sauté the onion in the bacon grease until it is transparent.

    Mix together water, ketchup, maple syrup, brown sugar, molasses, Worcester sauce, salt, pepper and chili pepper.

    Add water and beer (save a few ounces of beer to add at the end), dry beans, the liquid mixture and half the onion (I also add the bacon fat.) I don't add all the onion and bacon now, since they will kind of disappear and I like them a little more distinctive in the beans, but it is your call.)

  4. 4

    I use an electric pressure cooker (Instant Pot, which I love), and cook using the "Bean/Chili" setting under medium pressure for 30-minutes.

  5. 5

    When finished and vented, open the lid and stir in the rest of the onions and all the bacon. Adjust the level of liquid (no rule, just make it the way you like it) with the remaining beer, and adjust the level of Chili Pepper to your taste. Cook for 10-more minutes.
