Heat the vegetable oil in a frying pan, then add the onion and garlic, sautéing them until they go soft.

Remove the onions and garlic from the heat and brown the chicken for four minutes on each side.

Add the fruit and nuts to the chicken and pour in the apple juice. Season with the thyme, parsley, salt and pepper.

Cover, reduce the heat and simmer for 15-20 minutes, or until the chicken is cooked through and the apples are soft.
