Place the meat in a bowl and rinse it well.

If you want to serve it as gyros, cut it into 3 or 4 pieces. (If not, skip this step.)

Finely chop the garlic and add all the marinade ingredients except the olive oil. (You can also blend all the marinade ingredients and then pour them over the meat.)

Mix well.

Pour the olive oil over the meat, mix again, cover with plastic wrap, and let it marinate for 4-12 hours.

After marinating, place the meat in a baking pan and roast in a convection oven at 400°F (200°C) for 40-50 minutes, depending on how crispy you want the meat.

Meanwhile, prepare the sides: fry the potatoes, make the tzatziki (if using instead of yogurt), brush the pitas with oil and warm them in the oven. Slice the onion and tomatoes. If you like, sprinkle oregano on the pitas, fries, and tomatoes.

When the meat is golden brown, serve it on the pitas.
