I think it's the most sponge cake I have never made before, just adjusting the lemon cake recipe of my mother,my childhood fav!

Preheat oven to 190 º, heat up and down without a fan. Grease a cake pan and reserve.

In mixer bowl,beat the lemon zest, butter and cheese until combined. Incorporate the sugar, and beat back at least 5 minutes, until volume increases and the mix turns white.

Add eggs, one at a time. At this point the mix can cut of, but nothing happens. Add the sifted flours and beat at low speed as possible, just until the mixture is integrated, careful not sobrebatir. Ended up mixing with a spatula.

We pour the mixture into the pan, spreading it well (it is quite thick). We can smooth the surface with a spatula.

Bake 50-60 minutes, or until the center it is done (test it sometimes with a toothpick). Put out of the oven and leave to warm into the mold about 5 minutes. Then unmold and let cool completely on a wire rack.

DECORATION : Mix all the decoration ingredients and pour them on top of the cake, once cold. If we want a thicker texture, we must increase the amount of icing sugar until get the desired consistency.(OR just sprinkle icing sugar on top,the cake will continue tasting amazing).Enjoy it!
