Rinse and sort chickpeas.

Cut the skin from the squash, remove seeds and dice into 1 inch cubes.

Add all ingredients to crock pot except peas and spinach.

Cook on high for about 6 hours.

20-30 min before serving, add peas and spinach.

If sauce is too watery, add some corn starch.

Serve over jasmine rice.
