Ingredients

  1. Fresh salsa, store bought works well (If you buy jar add cilantro)
  2. 2 lbround beef or any boneless as whole beef
  3. 1 tbspcumin
  4. 1 tbsporegano
  5. salt and pepper
  6. 1 largewhite onion
  7. 1 bagsweet peppers, small bag mini peppers or one large of each color - red, yellow, orange (optional)

Steps

  1. 1

    Slice onion into strips. Slice peppers into strips. Remove seeds from small peppers

  2. 2

    Put beef in the crockpot. Top with onion, peppers, salsa.

  3. 3

    Add seasoning on top. Don't stir. Fill no more than 3/4 full.

  4. 4

    Cook on high 6 to 8 hours.

  5. 5

    Pull beef out and shred with a fork.

  6. 6

    Freezes well.

  7. 7

    Add beef back with juices and onion pepper mix. Serve over rice.
