Boil water and add the pork ribs. Boil for 3 minutes to remove blood (this keeps the broth clear).

Then, bring about 1.5 liters of water to a boil. Add the cleaned ribs and sliced daikon radish with a pinch of salt. Once boiling, reduce to a simmer, cover, and let it cook.

Pound the aromatics trio until fine (to avoid floating bits).

Heat oil over medium-high heat. Stir-fry the pork belly until it changes color, then add the pounded aromatics until fragrant. Add the Chinese broccoli and bok choy, season as above, and stir-fry until the vegetables wilt.

Transfer the stir-fried vegetables to the pot with the ribs and daikon. Stir to combine, then simmer on low heat for at least 2 hours (the longer, the better).

(Optional) Enhance the flavor by serving with chili fish sauce. To make, chop chili and coarsely chop garlic, then season with 4 tablespoons fish sauce, 1 teaspoon sugar, 2 tablespoons lime juice, and 1 1/2 tablespoons boiled water.
