  1. 1 lbGround Pork
  2. 5Garlic cloves - finely chopped
  3. 4 tspGinger - Finely grated
  4. 1 tspCrushed red pepper flakes
  5. 1 tspCumin seeds - lightly crushed
  6. 2 tbspSunflower oil
  7. 4 cupVegetable broth
  8. 1 bunchCollard Greens
  9. 4Scallions - finely diced
  10. 2 tbspBraggs amino acids or Soy sauce
  11. 4 ozRice Noodles

Steps

45 mins
  1. 1

    Mix pork, garlic, ginger, red pepper flakes, and cumin in medium bowl

  2. 2

    Heat oil in large pot over med heat

  3. 3

    Add pork mixture, stir until browned 8-10 min

  4. 4

    Add broth, bring to boil. Reduce heat and simmer 8-10min

  5. 5

    Add collard greens, scallions, and soy sauce, stirring occasionally until greens are tender 5-8minhg

  6. 6

    Meanwhile, cook noodles & drain

  7. 7

    Divide noodles among bowls and ladle soup over
