  • 1 literChicken Stock
  • 1 tbspRed Curry Paste
  • 1 tbspFish Sauce
  • 2 tspSugar
  • 2lime juice and zest
  • 2Portobello Mushroom diced
  • 2Cooked Chicken Breast Shredded
  • 1 bunchgreen onions

Steps

30 mins
  1. 1

    pour stock into saucepan and stir in curry paste, fish sauce, sugar, lime and zest. bring to boil

  2. 2

    add mushrooms and onions. cover and simmer for 2 minutes.

  3. 3

    stir in chicken. simmer for 5 minutes.

  4. 4

    serve soup garnished with green part of onions
