My mom made these for me when I was at boarding school. my wife loves then and always asking me to make them.

Finely dice dates

Crush biscuits but not too fine

In a large pot, melt sugar and butter over medium heat.

Add salt and vanilla essence

Add dates and mix well for about 5min.

Check heat and add egg. make sure it is not too hot to scramble the egg but will gently and slowly make a silky mixture.

Add biscuits, take off heat and stir well until well incorporated.

Turn over into a greased baking sheet and pat flat with a spatula.

Leave to cool, about 1-2 hrs

In a large bowl, empty coconut. Cut date mixture into squares and cover with coconut. gently press the coconut into the squares to ensure a good coating.
