I've made this countless times and wouldn't change it. They are made at home with pure ingredients and are easy to prepare. They keep well in the fridge or freezer once cooked, and when reheated, they are just as good—if not better—than fresh!

Sift the flours into a bowl. Add the remaining ingredients.

Mix all the ingredients together and knead well until you have an elastic dough that doesn't stick to your hands.

Place the dough in a bowl, cover it with plastic wrap or a towel, and let it sit in a warm place for 1 to 1 1/2 hours, until it rises and doubles in size.

Place the dough on a lightly floured surface, roll it into a log, and cut it into pieces with a knife. Shape into round pitas about 1 cm thick, and let them rest covered for 15 minutes.

In a pan, add a little sunflower oil over medium heat, and cook the pitas one by one until they are golden brown, piercing one side with a fork to prevent bubbles. Flip and cook the other side.

Keep them covered until ready to use. Once cooled, place them in food storage bags in the fridge or freezer for long-term storage.
