Ingredients

8 servings
  1. 4 ozSelf Raising Flour
  2. 3 ozSugar
  3. 1 tspBaking Powder
  4. 4 ozCreamed Butter
  5. 2Eggs
  6. 1 tspAll Spice (for a spiced cake) if required
  7. 2Fruit diced: Rhubarb, cooked & drained OR Apples OR Apricots & Bananas OR just experiment
  8. 1 tbspBerry jam (jelly to our friends in the USA)

Steps

15 mins
  1. 1

    Mix dry ingredients well together.

  2. 2

    Add to dry mix butter & eggs and whisk well blending lots of air into the mixture.

  3. 3

    Mix jam with fruit.

  4. 4

    Fold in fruit & jam mixture into cake mix making sure not to overwork mixture.

  5. 5

    Place into greased deep 5 inch cake tin with detachable bottom.

  6. 6

    Bake in hot oven for about 40 mins. Check after 30 mins. It is finished when the top springs back when pushed.
