Ingredients

  • 400 gflour
  • 230 gwater
  • 05 gsalt
  • 160 gstarter

Steps

    Mix all ingreduents

  2. 2

    Knead (wet and sticky)

  3. 3

    Stop kneading when window pane, smooth, oil hands to test

  4. 4

    Proof - 3+ hrs (should double)

  5. 5

    Knock down, make a ball, takes air out

  6. 6

    Shape - soft hands, tight round ball

  7. 7

    Use proofing basket (bowl, tray) - coat with flour, put towel in flour and wrap

  8. 8

    Proof 3+ hrs or overnight in fridge

  9. 9

    Check for bounce, if collapsing = over proofed, top with flour dusting

  10. 10

    Place on pan - score

  11. 11

    Cover for steam* or put water in roasting tray

  12. 12

    Preheat to 450

  13. 13

    25 min with lid 25 without

  14. 14

    Or 30-35 on pan
