  1. 3 cupFlour
  2. 2 cupSugar
  3. 2 tspBaking Powder
  4. 1 tspBaking Soda
  5. 1/2 tspSalt
  6. 1 cupUnsalted Butter, melted and cooled
  7. 2Large Eggs
  8. 3/4 cupWhole Milk
  9. 2 tspVanilla Extract
  10. 1 cupMashed Ripe Bananas (2 bananas)
  11. 1 cupMedium-Diced Ripe Bananas (1 banana)
  12. 1 cupSmall-Diced Walnuts
  13. 1 cupGranola
  14. 1 cupSweetened Shredded Coconut
  15. 1Dried Banana Chips, Granola, or Shredded Coconut (optional)

    Preheat oven to 350°F.

  2. 2

    Line 18 large muffin cups with paper liners.

  3. 3

    Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment (if you don't have a paddle attachment, a regular mixer will work fine). Add the melted butter and blend.

  4. 4

    Combine the eggs, milk, vanilla, and mashed bananas in a separate bowl, then add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.

  5. 5

    Fold the diced bananas, walnuts, granola, and coconut into the batter.

  6. 6

    Spoon the batter into the paper liners, filling each one to the top. Top each muffin with dried banana chips, granola, or coconut, if desired.

  7. 7

    Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from pan, and serve.
