Cooking Instructions

Fry the bacon until crispy and set aside.

place one slice of cheese on one of the bread slices, top with apple slices, cut the bacon into smaller pieces and place on top of the apple, cover with the remaining cheese and bread.

place half the butter in a nonstick saute pan over medium heat. when the butter has melted and looks foamy, place the sandwich in the pan, cover and cook for about 2 minutes. lift the sandwich with a rigid spatula and add the remaining butter to the pan. let the butter melt. flip the sandwich and cook for another 2 minutes or until the outside is crispy and cheese has melted.

The inspiration for this little gem of an appetizer sprang from the bag of sweet mini peppers in our fridge. I decided to throw them together with some leftover gorgonzola, a few strips of crispy bacon, and a bit of tart apple and see what happens. The result was fantastic! These will definitely be served if/when we're ever allowed to entertain again.
