Ingredients

  1. 1/2 tspDried basil
  2. 1/4 tspDried thyme
  3. 3 cupHot water
  4. 4 cupFresh baby spinach
  5. 1 cupDitalini pasta noodles
  6. 3 tbspOlive oil
  7. 1 cupWhite onion (minced, about 1 small onion)
  8. 1/2 cupChopped zucchini
  9. 1/2 cupFrozen cut Italian green beans
  10. 1/4 cupMinced celery
  11. 4 tspMinced garlic (about 4 cloves)
  12. 4 cupVegetable broth
  13. 1 can15 oz can light red kidney beans drained
  14. 1 can15 oz can, dark red kidney beans drained
  15. 15 oz2 cans, small white beans (drained)
  16. 2 can14 oz can, diced tomatoes
  17. 1/2 cupShredded carrots
  18. 2 tbspMinced parsley
  19. 1 1/2 tspDried oregano
  20. 1 1/2 tspSalt
  21. 1 tspBlack pepper
  22. 1 packagesJohnsonville Italian sausage, cut and browned

Steps

  1. 1

    Brown sausage and set aside (add after everything else is cooked)

  2. 2

    Heat olive oil over medium heat in large pot

  3. 3

    Sauté onion, celery, garlic, green beans and zucchini in oil for 5 minutes

  4. 4

    Add vegetable broth, tomatoes, beans, carrots, hot water and spices

  5. 5

    Bring to boil. Then reduce to simmer for 20 minutes.

  6. 6

    Add spinach leaves, sausage and pasta. Cook for 20 minutes.

  7. 7

    Enjoy
