I found this one online. I tweaked the ingredients a little though.

I found this one online. I tweaked the ingredients a little though.

In a large soup pot, brown the onion in the butter.

Add potatoes, canned soup, water and milk. Bring to a boil. Reduce heat, cover and let simmer for 15 minutes.

Add Velveeta and let simmer until melted.

Blend ingredients with a hand held stick blender until smooth.
- 5
Salt and pepper to taste. Serve hot.
