Ingredients

2 servings
  1. Pressure Cooker
  2. 2split pig feet
  3. 4-6 clovesgarlic
  4. 1 (3 inch)piece fresh ginger
  5. 1 tspsalt
  6. 1Tbl. Black pepper corns
  7. 2 tsp.Crushed red pepper flakes
  8. 2Tbl. Vinegar
  9. Braise
  10. 2 1/2 cupspressure cooker broth
  11. 3 clovesgarlic
  12. 2Tbl. Fish or soy sauce
  13. 2 tsp.Rubbed sage
  14. 1 tsp.Ground thyme
  15. 1 tsp.Crushed red pepper flakes
  16. 1/2 tsp.Ground cumin
  17. 1salt to taste

Steps

  1. 1

    Place trotters in pressure cooker, cover or almost cover with water

    Crush garlic, add to pressure cooker

  3. 3

    Slice ginger, no need to peel, add to pressure cooker

  4. 4

    Add the rest of the pressure cooker ingedients.

    Cover and bring pressure cooker up to pressure (15 psi on mine), lower heat just to maintain pressure, cook 15 minutes

  6. 6

    Turn heat off, let pressure release naturally, 10-15 minutes. Release any remaining pressure, open cooker.

    Get a pan for the Braise, I'm using a stirfry pan, transfer trotters to pan.

    Add broth, turn heat on to medium high.

    Add the rest of the Braise ingredients

    Bring to a boil, turn down to a simmer, cover

  11. 11

    Taste the broth and adjust seasoning, mine had enough salt and i didn't add any

  12. 12

    Every 10 minutes flip the trotters over. You will braise for 30 minutes. These are after 20 minutes, 2nd turn.

    After 30 minutes turn off heat. They are done.

    Serve.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.

This looks and sounds fantastic. I purchased a whole big a couple months ago and wasn't quite sure what to do with the trotters... Problem solved. It's on the menu for tomorrow.
