Ingredients

8 servings
  1. 2 kgAssorted bunch of Mustard leaves, Spinach, Fenugreek leaves, Batua
  2. 6Tomatoes
  3. 8Onions
  4. 10Green chilies
  5. 2 tbspGinger-garlic paste
  6. 1 tbspRed chili powder
  7. 1 tbspCoriander and cumin powder
  8. 1Salt to taste
  9. 3 tbspGhee

  1. 1

    Remove all the leaves from their stalks and wash thoroughly.

  2. 2

    Pressure cook the leaves for about 8-10 minutes, with just a dash of water.

  3. 3

    Puree the onions. Add the ghee to a wok and pour in the pureed onions when hot.

  4. 4

    Add the ginger-garlic paste to the onions and cook till brown.

  5. 5

    Puree the tomatoes and chilies and add to the onions. Add the spices as well and cook till oil releases.

  6. 6

    Puree the leaves to a fine paste. mix well with the onion and tomato masala.

  7. 7

    Serve hot with a dollop of butter and makai (corn) rotis.
