As a child I always loved sarso ka saag I have fond memories of sitting on the kitchen platform and dipping hot rotis into the cooker itself. Finally got around to making it myself!

As a child I always loved sarso ka saag I have fond memories of sitting on the kitchen platform and dipping hot rotis into the cooker itself. Finally got around to making it myself!
Steps

Remove all the leaves from their stalks and wash thoroughly.

Pressure cook the leaves for about 8-10 minutes, with just a dash of water.

Puree the onions. Add the ghee to a wok and pour in the pureed onions when hot.

Add the ginger-garlic paste to the onions and cook till brown.
- 5
Puree the tomatoes and chilies and add to the onions. Add the spices as well and cook till oil releases.

Puree the leaves to a fine paste. mix well with the onion and tomato masala.

Serve hot with a dollop of butter and makai (corn) rotis.
