
Pork and Apple Stir Fry

Prepare Rice-a-Roni per package directions, substituting half of the water for apple juice.

While rice is simmering, cut pork into 1/4 inch strips. Combine seasonings and toss with meat. A gallon ziplock bag works great for this.

In large skillet, melt margarine over medium heat. Stir fry meat 3-4 minutes or just until pork is no longer pink.

Add apples, and stir fry 2-3 minutes more until apples are almost tender. Add combined 1/3 cup apple juice and cornstarch. Stir 1-2 minutes or until thickened to form glaze.

Serve pork over rice. Add rice noodles or walnuts for an extra crunch.
