Ingredients

  • 2 boxRice-a-Roni rice pilaf
  • 2 1/3 cupApple juice
  • 1 tspPaprika
  • 1/2 tspGround thyme
  • 1/2 tspSeasoned salt
  • 2 tbspButter
  • 2 mediumapples, cored and sliced
  • 1 tspCornstarch
  • 1 lbBoneless pork loin, pork tenderloin, or boneless ribs. I prefer ribs for less cutting.

Steps

  1. 1

    Prepare Rice-a-Roni per package directions, substituting half of the water for apple juice.

  2. 2

    While rice is simmering, cut pork into 1/4 inch strips. Combine seasonings and toss with meat. A gallon ziplock bag works great for this.

  3. 3

    In large skillet, melt margarine over medium heat. Stir fry meat 3-4 minutes or just until pork is no longer pink.

  4. 4

    Add apples, and stir fry 2-3 minutes more until apples are almost tender. Add combined 1/3 cup apple juice and cornstarch. Stir 1-2 minutes or until thickened to form glaze.

  5. 5

    Serve pork over rice. Add rice noodles or walnuts for an extra crunch.
