Preheat oven at 350°F or 175 C

Peel the mango and slice very thinly on each cheek. Be careful to keep the slices attached at the top. Slide the knife under the slices.

In a pot, heat the sugar over medium low heat with a tablespoon of water. Let cook for 5 to 10 minutes, the liquid should be bubbling

Remove from stovetop and add butter. Let cook another 5 minutes.

Put the mango curve side down in the pot. Let it coat and baste for 5 minutes on each side, on low heat.

Remove the mango and coat the bottom of the pan with caramel. Place the sliced mango and add some more caramel

Cover mango slices with pastry puff, tucking the borders around the edges.

Cook for 39 to 45 minutes in the oven or until pastry puff is golden.

When cooked, place a plate on the pan and turn the pan over to unmold
