Ingredients

  • 26 1/2 ozCanned black beans
  • 7 1/2 ozCanned chipotles in adobo sauce
  • 1/3 bunchCilantro
  • 1/2 mediumRed onion
  • 6 sliceThick-cut bacon
  • 1 tspChili powder
  • 3 cloveGarlic

    Turn unoiled pan on medium-high heat

  2. 2

    Cut bacon into 1 inch squares and add to pan

  3. 3

    While the bacon is cooking, chop your onions, cilantro, garlic, and chipotles (save the adobo sauce)

  4. 4

    After letting your bacon cook to release some of the oils, add in your onions and cook until translucent

  5. 5

    Once translucent add in your garlic (BE SURE NOT TO CRISP THE BACON OR BROWN THE GARLIC)

  6. 6

    Add chili powder, chopped chipotles and remaining adobo sauce and cook until everything is tender and fragrant

  7. 7

    Add black beans/cilantro and bring to a boil

  8. 8

    Reduce heat to low and cook for 20-30 minutes (the longer the better)

  9. 9

    Serve over rice, garnished with raw red onion and chopped cilantro
