Ingredients

  1. 24jumbo pasta shells
  2. 1egg, beaten
  3. 1 1/2 cupmozzarella cheese
  4. 2 cupricotta cheese
  5. 1/3 cuponion, finely chopped
  6. 5 ozFresh baby spinach, chopped (or if you prefer, use 10 oz. chopped frozen spinach, thawed)
  7. 1/2 tspsalt
  8. 5 clovegarlic, minced
  9. 11/8 teaspoon nutmeg
  10. 1/2 cupparmesan cheese
  11. 2 canpasta sauce of choice

Steps

  1. 1

    Cook pasta shells in boiling water for about 10 minutes. Drain water and cool on a baking sheet.

    Heat oven to 350˚. Either wash the fresh baby spinach and chop or squeeze frozen spinach to remove moisture.

    Mix spinach, egg, ricotta, mozzarella, onion, garlic, salt and nutmeg.

  4. 4

    Stuff shells with about 1 1/2 tablespoons of spinach mixture.

  5. 5

    Arrange shells in a lightly greased casserole dish. Pour pasta sauce of choice (I used 2 jars of four cheese spaghetti sauce, which seems like a lot, but it helps finish cooking the pasta shells) on top of stuffed shells. Sprinkle with parmesan cheese.

    Bake 30 to 40 minutes.

In the last 4 years, I have become what I believe is a hobby chef. I absolutely love food and cooking! Everyone in my family (except my son (and even him sometimes) loves the things I make (at least most of the things). To be honest, most of the food I make are other people's recipes that I have tweaked a little bit to fit my family's likings. Although I am a disabled stay at home mom of 1 nine year old 3rd grade boy, I stay very busy and always moving. Sometimes (ok most of the time) my cooking leaves quite a mess. I like to create a new recipe with multiple other recipes. My favorite one would have to be my raspberry Margarita chicken salad. I love margaritas, especially the frozen raspberry Margarita from Chili's. I thought a Margarita marinated chicken salad would taste great with a homemade raspberry vinaigrette and I was right! I plan on posting the recipe with the sites I got the recipes from soon. I really look forward to finding and posting great recipes and getting to know everyone. Happy cooking!
