  1. 1/3 cupChopped onion
  2. 3 tbspChopped garlic (from can)
  3. 3/4 tspGround cumin
  4. 3/4 tspDried oregano
  5. 1/4 tspChilli powder
  6. 1/4 tspPepper
  7. 32 ozChicken broth
  8. 4 cupWater
  9. 14 ozDiced tomatoes (canned)
  10. 4 ozDiced green chillis (canned)
  11. 10 eachCorn tortillas
  12. 1 1/2 lbBoneless chicken breast
  13. 1Avocado
  14. 2 tbspFresh cilantro
  15. 1/2 cupGrated cheddar cheese

Cooking Instructions

    In a large pot over medium, stir onion, garlic, cumin, oregano, chilli powder, and pepper for 1 minute

    Add broth, water, tomatoes (with juice), and green chillis. Cover and bring to boil

  3. 3

    Meanwhile, stack tortillas and cut into half inch wide strips. Add to boiling broth.

    Reduce heat, cover, and simmer for 15 mins, stirring occasionally

  5. 5

    Cut chicken into small pieces and add to broth. Return to boil

  6. 6

    Reduce heat, cover and simmer til chicken is cooked (about 5 mins)

    Stir in cilantro.

  8. 8

    Serve into bowls. Top with avocado and cheese
