Wash the potatoes and dice into 1/2 inch cubes. skin on or off. Your choice.

Boil the potatoes until JUST fork tender. Drain well and set aside

Slice the polish sausages into 1 inch chunks.

Heat the oil in a large skillet on medium heat and add the potatoes and sausage chunks.

While the potato mixture browns combine the stir fry seasoning, mustard, ginger and cumin to make your sauce mixture. Mix well and set aside.

When the potatoes and sausage are browned, lower your heat to low and pour the sauce mixture over the potatoes and sausage. Toss to coat and thicken the sauce.

When the sauce has lost it's watery consistency, add the baby spinach. Toss to incorporate. Cover with a lid until the spinach is wilted.

Remove from heat. Rough chop the fresh basil and sprinkle on the cheddar cheese. Cover until the cheese is melted.
