Peel the onions and garlic

Soak the tamarind in hot water

Remove the seeds and pulp from bitter melon after cutting it

Scrape the hard edges of the bitter melon on the outside to make a smooth surface

Cut the bitter melon into tiny pieces

Rub salt to cut bitter melon pieces and leave it for 2-3 hours

Rinse the cut bitter melon with running water and dry it

Sauté the bitter melon in medium heat with coconut oil

Sauté separately pearl onions, garlic and red chilies with a bit of oil and keep it aside

Sauté cut tomatoes in a bit of oil and keep it aside

Blend pearl onions, tomatoes, garlic and red chilies into a purée with no water added in a blender

In a sauce pan, on fire, with a bit of oil, add mustard seeds and uradh dhal first until it sputters

Add the sautéed bitter melon

Add the purée

Add salt to taste and turmeric poeder

Add water if required based on consistency

Filter the tamarind water from dust and seeds and add it to the ingredients

Cook everything together for 10 mins

Bring it to a boil and garnish with cilantro leaves before serving
