Ingredients

  • 3-4 cupscooked turkey breast and thigh, cut into bite size pieces
  • 11/2 cupschicken broth
  • 2large shallots diced
  • 2jalapeños, seeded and diced
  • 1celery stalk thin sliced
  • 8 ouncesmushrooms, sliced
  • 2carrots, thin sliced
  • 3 cupsHomemade turkey gravy
  • 4 Tbspbutter
  • 2 Tbspflour
  • 1 cupheavy cream
  • 1 tspfresh lemon juice
  • 1 tspsriracha sauce
  • to taste salt and black pepper
  • 1/2 tspthyme
  • 1 cupfrozen pearl onions
  • Garnish with sliced green onions and parsley

Steps

  1. 1

    In a saucepan melt the butter and add the shallots, mushrooms, celery, carrots and jalapeño. Season with salt and pepper and cook 5-10 minutes. I like my vegetables to have a little firmness so I do not cook until completely soft.

    Add flour and cook 2 minutes.

    Add broth and heat.

    Add gravy and thyme and pearl onions, and bring to a boil.

    Add sriracha, and lemon, and cook until desired thickness. Taste and add additional seasoning if needed.

    Add turkey and heat through. Garnish with green onions and parsley

    Serve over puff pastry shells, toast, rice or mashed potatoes.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
