
Peppercorn-crusted beef tenderloin

Preheat gas grill to 400°. Coarsely crack peppercorns with a heavy skillet or mortar and pestle or spice grinder.

Tie kitchen string around tenderloin in several places to hold its shape as it cooks. Rub with oil. Sprinkle with salt and cracked peppercorns.

If using a gas grill, turn off one burner. If using charcoal, move the coals to one side. Place tenderloin to one side. Place tenderloin on unheated side of grill

Close the lid and roast 20 min. Rotate 180° and roast until internal temperature is 140° (medium- rare)15-30 min. more. Transfer to clean cutting board and let stand for 10 minutes before slicing.
