Ingredients

2 servings
  • 30 mlextra virgin olive oil
  • 1/2 mediumonion diced 1/2 cm
  • 3/4 cuparborio rice or other short grain rice
  • 60 mldry white wine
  • 1/2 tspsaffron
  • 1 literchicken stock
  • 2 tbspunsalted butter
  • 1/4 cupfreshly grated parmigiano-reggiano

Steps

  1. 1

    Pour olive oil on frying pan and heat on medium heat

  2. 2

    Saute onion until aromatic, careful not to brown them

  3. 3

    Put the rice in

  4. 4

    Cook for 1 to 2 minutes

  5. 5

    Pour the wine in, and cook until all the liquid vaporized

  6. 6

    Pour 1/2 of the chicken stock in

  7. 7

    Add the saffron

  8. 8

    Stir slowly until rice is cooked

  9. 9

    Add chicken stock little by little until the rice is fully cooked

  10. 10

    When the rice is aldente pour on pkate and garnish with grated cheese
