preheat oven to 350°

butter and flour pan
- 3
melt chocolate and butter over double boiler. cool. whip egg yolks with 1 ounce sugar till ribbon stage. beat on chocolate mixture.

beat egg whites and salt to soft peak. add 3 ounces sugar and beat to stiff peak. fold in flour and then 1/3 of egg whites into chocolate mixture, then the rest. pour into cake pan

bake 40 minutes. cool

mix filling

slice into 3, apricot in between and chill.

combine butter and chocolate with double boiler. bring cream to a boil and stir into chocolate. cool until glazing consistency and spread. cool for thirty minutes
