2 cupzucchini, grated
3 cupflour
1 tspbaking soda
1 tspsalt
1/4 tspbaking powder
2 tspcinnamon
1 cupnuts or raisins or dates or combination (optional)

beat first 4 ingredients well.

stir in zucchini.

add dry ingredients. mix well.

stir in nuts, dates or raisins.

grease 2 loaf pans.

bake at 350 for 1 hour
