Ingredients

2 servings
  1. 1 1/2 cuprice
  2. 1/2onion (chopped)
  3. 1 tsptomato paste
  4. 1 tspboulion powder
  5. salt
  6. ground black pepper
  7. water
  8. 1oil or butter for pan frying the onion

Steps

    Pan fry onions in a small amount of oil or butter until translucent

  2. 2

    Add tomato paste and stir till you can't taste the caned paste taste. You will know it is ready when you see oil excuding on its surface. I like to keep it as long as possible to gain depth in flavour on a very low heat. Watch that it doesn't burn.

    Add as much water as specified on the rice package and stir.

  4. 4

    Add boulion powder or cubes then stir and taste if it needs more salt.

  5. 5

    Add ground black pepper and stir

  6. 6

    Depending on the type of rice; add the rice directly to the cold water (for quick cook rice)

  7. 7

    If the rice you are using is the normal type (not quick cook); you might want to heat the rice with the cooked tomatoe paste before adding boiled water to insure that the rice is fluffly and that the grains are separate. In this case you will season after adding the water. You know your rice, cook the rice the way you always cook it.

    Stir the rice in and cover. Lower the heat and start counting time after the water boils. Leave to cook as indicated on the rice package without opening on very low heat.

    After the time specified passes, check if rice is cooked through and that all the water is absorbed. If the rice is not cooked through but all water was absorbed add a little more water (1/4 cup at a time) and leave longer covered on the stove. If water is not all absorbed leave longer on the stove. Cover if rice is not cooked or uncover if rice is cooked.

    Serve with grilled salmon or cooked shrimps or fried fish or oven cooked whole fish with a side of tahini salad
