Ingredients

  1. 2 cupyellow rice
  2. 1 smallred bell pepper
  3. 1smaill green bell pepper
  4. 1 clovegarlic
  5. 1Salt to taste
  6. 1 cancoconut milk
  7. 18 oz chopped pineapples w/Juice
  8. 1 cupPineapple juice
  9. 1 bagshredded coconut flakes
  10. 2 cupwater

Steps

  1. 1

    chop peppers and garlic.

  2. 2

    In Casserole pan combine Rice, peppers, garlic, coconut milk, pineapples (including their juice) extra cup of Pineapple juice, 1 CUP of WATER, half of bag of shredded coconut.

  3. 3

    Add salt to taste, cover and place in over on 350* Bake for 20 minutes or until rice is tender.

  4. 4

    If necessary add additional water if absorbed before rice is done cooking.
