Ingredients

3 servings
  • 1/2 cupQuinoa
  • 1/4 cupchopped multi colored bell peppers
  • 1/2 cupBroccoli florets
  • 1small carrot sliced
  • 1/4 cupchopped Cucumber
  • 2iceberg lettuce roughly chopped
  • 1onion chopped
  • 2 tbspsPomegranate arils
  • Few black grapes for garnish
  • 1/2cracked peppercorns
  • to tasteSalt
  • 1 tbspoil
  • 1 tbspLemon juice
  • Water as required
  • 2-3 tbspschopped coriander leaves
  • 3garlic cloves sliced

Steps

  1. 1

    Wash the quinoa 3-4 times in water and cook for about 15 mins. It should not be mushy and over cooked.

  2. 2

    Drain the water nicely from the quinoa using a strainer. Keep aside.

  3. 3

    Heat oil in a pan. Add the onion, garlic, chopped bell peppers, broccoli, carrot, season with salt and toss for 2-3 mins on high heat.

  4. 4

    In a mixing bowl add the tossed veggies, quinoa and the remaining ingredients and mix well.

  5. 5

    Garnish with chopped coriander leaves, Pomegranate arils, black grapes and serve.
