I was inspired by the recent mombasa cookpad event where seline taught us how to make a red velvet. I put a different spin on it and loved the end results😉

Assemble ingredients

For cake flour, I took off 2 tblsp of all purpose flour and replaced with 2 tblsp of corn flour. To the cake flour, add baking soda, cocoa and salt

Whisk until all is mixed then set aside

In a separate bowl, mix sugar with margarine and mix with a hand mixer

Add vegetable oil to it and mix again

Then add two egg yolks and mix

The mixture will look like this

Pour it in a bowl and add the food colour, vinegar and vanilla essence

Fold in using a spatula till it's all mixed then add the maziwa lala/buttermilk and gently fold in

Add flour gradually in three steps, and fold in till all flour is finished and we'll mixed. Do not over mix

Pre-heat the oven.Take the egg whites

Whisk with a hand mixer on high speed till it forms a while foam

Add the egg whites to your mixture and fold gently

Add your fruits and fold.

Grease your bundt pan

Pour in your mixture

Bake for 40-45 mins

When ready, turn upside down on a cooling rack

Serve with desired beverage
